Lockdown lazy: coconut biscuits

You could not make easier, quicker, more no fail biscuits than these. AND they are pretty good to eat. Crispy on the edges and chewy towards the middle. It's a scant twenyt minutes from the time you find the self raising flour on the shelf to sinking your teeth into one ( or more) of these. You've got to make some!




Coconut Biscuits

1 cup self-raising flour 1 cup sugar 1 cup desiccated coconut 1 beaten egg ½ cup melted and cooled butter

Method

  • Mix all ingredients together with a fork or wooden spoon.

  • Place teaspoons of the mixture onto buttered cookie sheet and bake for 12 mins at 180c depending on your oven.

  • Remove and cool on a wire rack.




Notes: The first time I made these I used white sugar as I'd just run out of soft brown. Hence the pale gold colour in some pictures. The browner ones are made with soft brown sugar, and I reduced the amount to more like 3/4 cup.
