Three Questions: Prickle Hill Produce's James Duffell
Returning to the family farm in Coleambally, after a career in the hospitality industry, James is the cheery face of Prickle Hill Produce at markets from Double Bay and Carriageworks to Fox Studio and the Northern Beaches. 1. Secret naughty food obsession?
Garlic bread with lots of butter and olive oil to keep it nice and moist.
2.Memorable thing you ate most recently?
My partner attempted to cook oxtail and ended up nailing the best slow cooked oxtail casserole I've ever had.
3. Never fail pantry ingredient?
Smoked paprika. Proper Spanish smoked paprika.The stuff you buy in tiny tins with the woman dancing on it, and when you smell it, it smells like aromas of paella cooked in the street.
