Three Questions: Prickle Hill Produce's James Duffell




Returning to the family farm in Coleambally, after a career in the hospitality industry, James is the cheery face of Prickle Hill Produce at markets from Double Bay and Carriageworks to Fox Studio and the Northern Beaches. Lockdowns mean Prickle Hill is delivering boxes of produce and farm fresh eggs to doorsteps all over Sydney. My family has had delicious freshly squeezed orange juice every day thanks to Prickle Hill for as long as we've lived in Sydney. Apart from reliably excellent produce, James is the kind of soul who will leave his stall unattended to help someone take the shopping to their car. Being a supplier to many cafes, bars and restaurants around town, you can always get a great dining tip from James while you're shopping at Prickle Hill!

I asked James three questions:


1. Secret naughty food obsession?

Garlic bread with lots of butter and olive oil to keep it nice and moist.


2.Memorable thing you ate most recently?

My partner attempted to cook oxtail and ended up nailing the best slow cooked oxtail casserole I've ever had.


3. Never fail pantry ingredient?

Smoked paprika. Proper Spanish smoked paprika.The stuff you buy in tiny tins with the woman dancing on it, and when you smell it, it smells like aromas of paella cooked in the street.
